This is the biggest cake I’ve ever made and also the first time I had ever used fondant. That being said…I was drunk when I decorated this entire cake. My relatives arrived last Wednesday night (the same night I planned to start decorating this bad boy) and they insisted that I have drinks with them. Three beers and a big glass of wine later…I was sitting in front of a cake…clueless. I recall mumbling things to myself, “why did I drink so much?”….”why am I such a lightweight??”…”I want to eat this cake” as I struggled to pipe frosting. I told myself I wouldn’t let it happen the following night. One work day, a drive home, a bottle of wine, and hours later…I completed the cake. I love my Dad.

All of that aside…it was awesome to see all of my family come down for the retirement ceremony and I’m incredibly proud of my dad for his 30 years of service.

Another attempt and this time it’s…Caramel Apple Streusel Cheesecake. I was actually trying to go off of a recipe I had seen, but due to my forgetfulness I had to wing it on my own. I forgot to get a few ingredients and ended up doing something completely different. I suppose it worked out for the best. I hope I never have to make it again because I can’t remember exactly how I made it…magic?

I’ve received a few messages here and a couple from friends on fb for the Nutella Cheesecake recipe. So here it is!
Angie’s Hella Nutella Cheesecake ;)
1 Box Nilla Waffers
4 Tbsp melted butter
3 packages (8 ounces each) cream cheese, softened
1/4 cup sugar
3 eggs
1 1/2 tsp vanilla
1/2 cup melted white chocolate
1 bag of mini semi sweet chocolate chips (half of the bag is needed, but the rest of the chips are optional if you decide to decorate it differently)
1 container of whipped cream (you can make it yourself if ya like)
AND last, but definitely not least…1 big container of NUTELLA :)

Heat up your oven to 325 degrees Fahrenheit. Start by making your crust. I used a food processor to pulse Nilla Waffers into fine crumbs. Add melted butter and mix. Flatten this mixture at the bottom of a spring form pan and refrigerate.  
Now get your cream cheese (softened at room temp) add sugar and beat with a mixer until it’s nice and smoooooooth :p Beat eggs in one by one. Mix in melted white chocolate and vanilla. 
NOW what I did was…melted half a bag of mini semi sweet chocolate chips in a small sauce pan…then added heaping amounts of Nutella (its up to you however much you like, but remember - it’s HELLA Nutella) This melted mixture of goodness was poured on the crust and followed by the cheesecake mixture. 
Bake for 55 minutes…eat a spoonful of Nutella while you wait ;)
When it’s done baking, allow to cool and store in the refrigerator for about an hour…or until cooled down.
THE FUN PART…I whipped about 2 cups of whipped cream and more heaping amounts of Nutella together (assuming you haven’t eaten all of the Nutella). When it becomes a mousse-like consistency is when it’s ready to be spread evenly over top of the cheesecake. 
THEN…take more heaping amounts of Nutella and spread it allllll around the cake. This helps the rest of the mini chocolate chips you haven’t used (or eaten) stick to the sides of the cheesecake. I also spooned some Nutella into a ziplock baggy and cut the tip off to make a swirly design around the edge of the cake…and daintily sprinkled more chocolate chips on top.
Sorry if this wasn’t short, sweet, and to the point lol, but I hope if you make it that it turns out great :) Make adjustments to your liking and decorate it however you like. Enjoy and happy baking =)
